Job Description:
ESSENTIAL JOB FUNCTIONS:
* Prepares all items according to recipe standards. Maintains required stock levels in various restaurants. Relieves the line cooks as needed

* Responsible for fast and sanitary preparation of all menu items following established recipes and standards.
* Establishes and administers training programs for the restaurant.
* Counsels, guides and instructs assigned personnel in the proper performance of their duties.
* Directs the development and administration of controls for all phases of the restaurant in an economical and profitable manner, while maintaining established standards.
* Coordinates the maintenance and development of methods for quality preparation of food and monitors appearance of food served; assists in the maintenance and development of procedures for food service and menu items for maximum customer satisfaction.
* Manages the annual budget.
* Submits proposals for capital expense projects and manages cost of approved projects to completion.
* Maintains an efficient program of scheduling to insure a high standard of food preparation and service with the use of minimum man-hours.
* Assures that any hazards within the restaurant are eliminated.
* Recommends changes including hiring, promotion, demotion and termination of assigned employees.
* Must maintain a consistent high level of product quality, productivity and line of supply.
* Implement and enforce sanitation and safety practices.
* Support and emulate the work culture, policies, procedures, and standardization set for by the Executive Chef.
* Must be able to read recipes, follow their directions, and re-write recipes to adjust quantities required.
* Maintain a positive work environment with staff.
* Provide constant leadership and training.
* Provide training tools for employees so they may effectively perform their necessary job duties.
* Must be able to meet the attendance guidelines of the job and adhere to departmental and company policies.
* Cooks all food orders, including meat, fish, poultry, and related items in a quick, timely and accurate manner.
* Responsible for checking and ensuring an adequate supply of foods & seasonings at work station.
* Checks that food is adequately prepared for cooking and serving.
* Saute, steam, fry, poach, and basically prepares any and all foods needed for the guest’s orders.
* Prepares desserts, entrees, soups, and other foods. Previous experience cooking eggs is preferred.
* Reads food orders from the kitchen printer, prepares it and serves the food in an attractive manner, consistent with the recipes and plating guides.
* Operates steamer, oven, slicer and other cooking equipment; and controls food production to include Flattop, Fryer, and proper cooking times and temperatures.
* Follows safety rules and keeps work area clean & orderly. Maintains and rotates dated food stock.
* Breaks down workstations, cleans & restocks.
* Maintains a clean and sanitary work environment Opens food service outlets in a timely fashion as instructed.
* Conducts self in an appropriate professional manner at all times.
* Must be able to work various shifts and hours to include holidays and weekends.
* Must present a well groomed appearance, and must possess excellent customer relations and communication skills.
* Meets the attendance guidelines of the job and adheres to regulatory, departmental and company policies reading/writing, typing, advanced computer skills very organized and able to multi-task, knowledge of all Microsoft Office products specifically PowerPoint, Word,
* Excel and other software programs a plus,.
* Perform general clerical duties to include but not limited to: photocopying, faxing, mailing, and filing
* Handle meeting requests and setup, maintain & distribute weekly schedules for staff.

* Hard working, desire to learn, ability to follow instructions. Stratton Warren, Time Works, Microsoft Excel and Word. Culinary degree required.
* Must be able to work any day of the week and any shift, including holidays and weekends.
* Graduate of post high school two year Culinary Arts School or equivalent technical training food & beverage. Ability to train, follow and execute training manuals. 5 years restaurant industry work, including two to three years progressive supervisory experience in food production in a hotel or chain restaurant environment. Proven performance in implementing and maintaining food production operational standards
