JOB SUMMARY: Cleans and sanitizes all dishes and silverware to be used by guests of casino/hotel. Cleans and sanitizes all kitchen equipment. Keeps dining room and banquet areas clean and sanitized.

Job Description:
ESSENTIAL JOB FUNCTIONS: Prepares tableware for washing, i.e., scrapes plates, pre-soaks silverware, places all items to be washed in their proper dishwasher rack. Sets up dishwashing machine, i.e., drains closed, tanks filled, temperatures at correct level, detergents at proper level. Washes dishes and then stacks and stores china in appropriate kitchen area. Thoroughly cleans dishwashing equipment and working areas. Collects all soiled pots, washes and restacks cleaned pots on shelves. Responsible for all removal of garbage and refuse. Mops and sweeps floors. Washes walls and ceiling tiles. Sanitizes all cooking equipment. Acts as a role model to other employees and always presents oneself as a credit to Harrah’s and encourages others to do the same. Meets the attendance guidelines of the job and adheres to regulatory, departmental and company policies.

QUALIFICATIONS: Must have speed and accuracy in order to maintain maximum efficiency. Must be able to get along with co-workers and work as a team. Must present a well-groomed appearance.

PHYSICAL, MENTAL AND ENVIRONMENTAL DEMANDS: Must be able to maneuver to all areas of the kitchen and food service areas. Must be able to tolerate areas with temperatures in excess of 115 degrees near dish machine. Must be able to use the following chemicals for cleaning and sanitizing all kitchen areas: bleach, Pine Sol, oven cleaner, etc. Must be able to operate the dish machine. Must be able to lift up to 100 pounds. Must be able to push carts, pull, bend, stoop, and stack racks of dishes and silverware. Must be able to work at a fast pace and in stressful situations. Must be able to read, write, speak and understand English. Must be able to respond to visual and aural cues.
