Position Summary:
Responsible for day to day culinary operation in specified outlet. Supervises line cooks.

Supervises the back of the house kitchen employees. Maintains proper employee/employer relations, recognition, evaluating performance and administration of discipline. Ensures fast clean service of all menu items as well as consistency. Controls food production to include proper cooking methods, cooking time and temperature. Ensures sanitation policies and storage of prepared foods are followed. Ensures that the proper levels of food are prepared based on forecasted needs and ensures their prompt delivery. Ensures that the minimum level of labor is used to perform the required level of production. Completes the required daily financial tools and reports. Wears a bi-therm, gaming license (where required), name tag and hair restraint. Maintains a sanitary, neat, clean, organized, safe and comfortable work environment where talents, skills and trade practices are exchanged, practiced and enhanced. Communicates and cooperates with the front of the house management team. Enforces all appearance guidelines. Enforces all regulatory, internal controls, policies and procedures.
The term “management” includes duties such as interviewing; training; selecting and adjusting rates of pay and hours of work; directing the work of employees; maintaining production; appraising employees’ productivity and efficiency for purposes of recommending promotions or other changes (evaluations); handling employees’ grievances and complaints; disciplining employees; planning work; providing for safety and security; and monitoring or implementing legal compliance matters.
Qualifications:
Knowledge, Skills & Education Preferred:
Graduate of post high school two year Culinary Arts School or equivalent technical training food & beverage. Ability to train, follow and execute training manuals. 5 years restaurant industry work, including two to three years progressive supervisory experience in food production in a hotel or chain restaurant environment. Proven performance in implementing and maintaining food production operational standards
Physical Requirements:
* Ability to continuously stand and maneuver in confined area.
* Ability to frequently push or pull 75lbs.
* Ability to frequently lift 25 lbs.
* Ability to continually stand and/or walk entire shift.
* Must be able to work a fluctuating schedule that includes nights, weekends, and holidays.
* Ability to work in hot or cold environment.
