Job Description:
Job Summary:
Responsible for the quality assurance of all finished products of the venue and the supervision of all food production ensuring all specifications and standards are met.

Qualifications:
High school degree or equivalent required. Graduate of a culinary arts program preferred. A minimum of five years previous supervisory/managerial experience in high volume restaurant industry required. Excellent verbal and written communication skills required. Must be able to logically plan work and processes to ensure finished product delivers maximum guest satisfaction. Must possess knowledge of State Health Department regulations. Must possess basic computer skills and be familiar with the use of Microsoft Office Suites (Word, Excel, Outlook).

Essential Job Functions:
* Maintains excellent kitchen hygiene and sanitary conditions at all times.
* Ensures venue product and dining experience surprises and delights the guests.
* Solicits and responds to guest feedback by direct interaction.
* Conducts service education program, coaches, develops and leads staff in proper performance of duties.
* Leads by creating a positive, supportive work environment.
* Develops and administers departmental operating budget.
* Controls food and labor costs on a continual basis within approved budgetary controls.
* Ensures compliance with all regulatory, internal controls, policies and procedures.
* All other job duties as assigned.

Qualifications:
* Physical, Mental and Environmental Demands:
* Must be able to work independently.
* Must be able to respond to calmly and make rational decisions, when handling guest and employee conflicts.
* Must be able to stand and walk for prolonged periods of time, 6 – 8 hours.
* Responds to visual and aural cues.
* Must be fluent and literate in English.
* Must be able to stoop, bend, as well as maneuver through all areas of the venue and kitchen.
* Must be able to lift and carry 25 pounds and push 100 lbs.
* Must have the manual dexterity to cut, slice, whisk, grab, grip, type, pull, hold, tear, sort, and reach.
* Must be able to tolerate areas containing second hand smoke, dust, loud noises and bright lights.
* Must be able to work a varied schedule, holidays and weekends.

Certificates, Licenses, Registrations:
Must qualify for, obtain, and maintain a gaming license from the Indiana Gaming Commission.
